"Tangy" Beef & Watercress Salad

"This recipe is a variation on the traditional Vietnamese beef and watercress salad, which is called "Dancing Beef;. Only instead of cutting the beef into small cubes, I prefer to cut the beef into thin strips. The eggs and tomatoes add vibrant color and taste as well as makes it look that much more appetizing. Only this time, we decided to try it with some new Mama Tang's Asian Vinaigrette. All I can say is it was the perfect finish to a great tasting salad! Not only did it give this dish a "tangy" flavor that is reminiscent of the authentic Vietnamese dish itself, but it was much more flavorful! I highly recommend you try this the next time you have a craving for beef and would like a salad as a meal."

Ingredients:

  • 1 pound flank steak, or top round
  • 1 tablespoon corn starch
  • 1/4 teaspoon fresh ground black pepper
  • 1 large sweet yellow or red onion, halved and sliced
  • 1 half a bulb of fresh Garlic, peeled and diced
  • 1 finger of fresh Ginger, sliced
  • 1 1/2 tablespoons of Bertolli Extra Dry Olive Oil or Canola Oil
  • 2 bundles of watercress
  • 8 large eggs, medium or hard boiled, quartered or sliced
  • 8 ounces cherry or sweet grape tomatoes
  • 1 cup of Original or Spicy Mama Tang's!

Salad Directions:

  1. Start by trimmimg off the excess fat from beef and thinly slice against the grain. (HINT: You can partially freeze the beef, to make slicing easier.)
  2. In a medium-sized bowl, combine the beef and mix 1 cup of Orginal or Spicy Mama Tangs, cornstarch, black pepper, garlic and 1 tablespoon of Olive oil.
  3. Refridgerate for about 1-2 hours.
  4. Selectively choose the tender stems of watercress and trim, wash and dry. Set aside.
  5. Heat 2 tablespoons of Olive oil in a wok or skillet and add the minced garlic and chopped onions
  6. When garlics are lightly brown, add the beef in a single layer.
  7. Cook until browned on one side, then turn over to brown the other side.
  8. Garnish a plate with the watercress and top with beef, onions, tomatoes and eggs.
  9. Drizzle some Original or Spicy Mama Tang's over the salad according to taste and serve!
